Cheese-Spinach Pie

Cup chopped onion

tbsp. margarine

lb. sliced cheese (Swiss or Muenster)

cup cooked, chopped spinach(drained)

large eggs
1/3-1/2
cup of milk

pie shell
Cook onion in margarine until tender; cool. Lay slices of
cheese over piedough, follow with spinach, then onions. Beat
eggs, adding enough milk tomake 1 cup. Add seasonings and
pour over ingredients in the pie shell. Bakein 400° oven about
35 minutes, or until a knife comes out clean. Servepiping
hot. (Can be frozen after baking.) Serves 4.
Variation: Substitute cooked, chopped broccoli, green
beans, zucchini,or peas for spinach.

* Substitute soy formula for milk. Use nondairy margarine
and aged naturalcheese and milk-free dough
